Ingredients:
- 8 eggs (cage-free, organic)
- 1/2 cup coconut oil (melted)
- 1/2 cup coconut flour
- 1 Tbsp. cinnamon
- 1 tsp. vanilla
- 1/4 tsp. salt
- Topping(s) of your choice
Instructions:
- Beat eggs, coconut oil, and vanilla together
- Mix coconut flour, cinnamon, and salt together in a separate mixing bowl.
- Stir dry ingredients into wet ingredient mixture (resulting mixture should be thick)
- Spoon mixture into waffle iron and cook as directed.
- Top with real maple syrup, applesauce, or berries and cream. (Waffles tend to be dry, so wet toppings work best!)
