Wheat-less Wednesday – Wheat-less Waffles

Ingredients:wheatless waffles

  • 8 eggs (cage-free, organic)
  • 1/2 cup coconut oil (melted)
  • 1/2 cup coconut flour
  • 1 Tbsp. cinnamon
  • 1 tsp. vanilla
  • 1/4 tsp. salt
  • Topping(s) of your choice


  1. Beat eggs, coconut oil, and vanilla together
  2. Mix coconut flour, cinnamon, and salt together in a separate mixing bowl.
  3. Stir dry ingredients into wet ingredient  mixture (resulting mixture should be thick)
  4. Spoon mixture into waffle iron and cook as directed.
  5. Top with real maple syrup, applesauce, or berries and cream. (Waffles tend to be dry, so wet toppings work best!)
  6. Enjoy!
