Wheat-less Wednesday – Mexican Style Spaghetti Squash

Mexican Style Spaghetti SquashIngredients:

  • 1 spaghetti squash
  • 2 chicken sausage links, cooked and sliced
  • ¾ cup salsa
  • 2oz Queso Blanco (Mexican white cheese)


  1. Preheat oven to 375°
  2. Cut squash in half lengthwise and bake 40 minutes on a baking sheet.
  3. Let the squash cool slightly, then scoop out the seeds.
  4. Using a fork pull the squash away from the hull until it resembles spaghetti pasta.
  5. Add half of salsa to each squash half.  Mix and season with salt and pepper.
  6. Add 1 chicken sausage and crumble half of cheese over the top.
  7. Return to oven and bake approx 10-15 minutes to warm everything through and melt cheese.
  8. Serve and enjoy!

*You can choose a different protein, cheese, and sauce to make this dish suit your taste.
