Ingredients:
- 1 spaghetti squash
- 2 chicken sausage links, cooked and sliced
- ¾ cup salsa
- 2oz Queso Blanco (Mexican white cheese)
Instructions:
- Preheat oven to 375°
- Cut squash in half lengthwise and bake 40 minutes on a baking sheet.
- Let the squash cool slightly, then scoop out the seeds.
- Using a fork pull the squash away from the hull until it resembles spaghetti pasta.
- Add half of salsa to each squash half. Mix and season with salt and pepper.
- Add 1 chicken sausage and crumble half of cheese over the top.
- Return to oven and bake approx 10-15 minutes to warm everything through and melt cheese.
- Serve and enjoy!
